Why nature tastes so good

On its own nature preserve covering more than 30,000 hectares, the Naturschutz Schleswig-Holstein foundation, founded in 1978, promotes projects to protect the environment and various species. One of these is the “Wilde Weiden” project, where old breeds of cattle and horse function as “gardeners” – restoring a natural balance.

One attractive plus of the project is that it works in the service of conscientious meat-eating.

At the end of their happy lives, Highland and Galloway steer and aurochs provide an especially flavourful meat that you can enjoy with us at Waldschlösschen.
