The star of our culinary operations is chef de cuisine Matthias Baltz. He manages the restaurant at Hotel Waldschlösschen, delighting his guests with original creations and classic dishes from the menu. In selecting and preparing the dishes for Restaurant Fasanerie and Restaurant Olearius, we set great store by top-quality organic ingredients locally sourced from producers in the Schleswig-Holstein region. These practices have made us a member of FEINHEIMISCH for many years. We also support the “Stiftungsland – Genießerland” project.
